Ingredients:
- 3 egg whites
- 1 pinch salt
- 1 cup white sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 1/4 cups heavy whipping cream
- 1/2 cup confectioners' sugar
- 1 pint fresh raspberries

Instructions:

Begin by preheating your oven to 300 degrees F. Take a cookie sheet and line it with parchment paper, drawing a 9-inch circle in the center. If you need to, use a 9-inch pan as your stencil. In a large bowl, beat your 3 egg whites until soft peaks are formed. Gradually add ¾ of the 1 cup of white sugar while whipping, making sure sugar gets completely dissolved. Mix the ¼ cup of sugar with your cornstarch. Fold this mixture carefully and lightly into the meringue. Add 1 tbsp of lemon juice for added flavor. Spread the mixture onto the cookie sheet so that it fills the circle you drew earlier, only until you have created a layer that is ¼ of an inch thick. Using a spoon, swirl the remaining meringue around the edges to create a bowl. (Bowl should be shallow). Bake meringue base at 300 degreesfor 1 hour. Turn off the heat, but leave the meringue in the oven for a maximum of 30 minutes. Use a toothpick to test the meringue after the 30 minutes is up. It should be hard on the outside, but moist and soft on the inside. Using a large bowl to combine your 1 ¼ cream, and your ½ cup of confectioners’ sugar. Whip until it is thickened, and then place it into the meringue. Top it all off with the raspberries. Serve and enjoy!
